Strawberry delight

What do you do when your family is all eaten out on fresh strawberries, but you have a bunch of them sitting in the fridge threatening to go bad? Make strawberry sauce for ice cream!




Strawberry Sauce

1 pint strawberries, cleaned and stemmed
1/3 cup white sugar
1 teaspoon vanilla

Cut about 1/3 of the strawberries in half. In a saucepan over medium high heat, combine strawberries, sugar and vanilla. Cook, stirring occasionally, until sauce thickens, about 5 minutes. Remove from heat. In a blender, puree about 1/3 of sauce, then mix back into remainder. Store in refrigerator.

  1. The other day I saw a blog that had cupcakes where a strawberry was pushed down in the batter before baking. .They had cut the baked cupcake sideways and showed the cross-section. They looked yummy!

  2. That looks SO GOOD!!! What a great idea to add some vanilla extract. I put vanilla in EVERYTHING! I'm going to have to get some strawberries, just to make strawberry sauce. I just found your blog off u-handbag. Love all your beautiful sewing projects!

  3. We use jam that doesn't set up as ice cream sauce. Yum.
